Dom Perignon, Champagne 2000 The nose shows fresh stone fruit with a sense of fresh peach tarts, still warm from the oven. In the mouth there is the characteristic acidity, a taste of green apples yet enhanced by a lingering creaminess – quite elegant.
The grapes behind this wine are approximately 50/50 Chardonnay and Pinot Noir sourced from Grand and Premier Cru villages. The wine is aged en tirage for 6-8 years and the dosage always seems to be a bit more than with other brut wines from Champagne – yet the acidity always balances it.

This is the same wine that was formerly branded ‘Moet et Chandon Dom Perignon’ and labeled with the dosage designation of Brut. Today Dom Perignon is a brand that has broken out on its own.
