There&#8217;s a bit of earthiness adding complexity as well. I&#8217;m planning on pairing this wine tonight with grilled salmon rubbed with curry.<\/p>\n<p>The grapes were sourced from vineyards  in the Yarra Valley and the broader area of Port Phillip. The fruit was not crushed and some whole clusters were included in the fermentation. 70% of the wine was aged in a mix of new and used French oak.
