Our friends Chuck and Barbara brought over the &#8217;06 version to share with us at dinner. This was also a winner with the intensely acidic edge and the pungency of the capsicum softened a bit. The grapes for the 2007 were harvested at 20.2-23.7 brix and the juice was cold fermented in stainless at 10-12 degrees C. Winemaker Simon Waghorn.
